Recipe homamade cake

“Flødeboller” is a chocolate-covered treat that most Danes love.

Anna and Clara’s homemade ’flødeboller’
– approx. eight pcs.

Ingredients:
Chocolate shells:
Approx. 200-300 g of dark chocolate
Pastry bottoms:
150 g almond flour
50 g sugar
1-2 egg whites

Filling:
1 dl sugar
4 pasteurised egg whites
Method

Chocolate shells:
Temper the chocolate. Bring out two moulds and make sure that they are cleaned without soap. Pour the melted chocolate into the moulds, and shortly after, pour out the surplus chocolate. Use the putty knife to remove the surplus chocolate from the edges of the mould. Place the moulds somewhere cool for approx. 30 minutes.

Pastry bottoms:
First, mix almond flour and sugar. Add the egg whites a bit at a time and knead into a dough. Should the dough become too dry, you can add more egg whites; should it become too pasty, add more almond flour. Add a sheet of baking paper to a baking pan and roll out the dough so it is approx. 2-3 mm thick. You can use the sisters’ drinking glasses to mark out the right size of the pastry bottoms.
Bake the bottoms for approx. ten minutes at 175 degrees.
Remember to keep an eye on the pastries while they are in the oven, so they do not get burnt.

Filling:
Beat the egg whites until they become foamy and add the sugar a bit at a time. Hereafter, you beat the egg white mixture until the foam gets an even and set consistency. This will take somewhere between 10-20 minutes. A hand mixer can ease the process.
Fill an icing bag with the egg white foam and carefully remove the chocolate shells from the moulds. Add filling to every chocolate shell and carefully place each one atop a pastry bottom. Your pastries are now ready to be served.
Store the pastries in the refrigerator, unless you want to eat them right away.

DIY salad

Did you know that, botanically, quinoa is neither a grain nor a cereal?
It belongs to the Salicornia family, together with spinach and beetroot.
Anna and Clara are currently very enthusiastic about quinoa, as it is a good
source of fibre and a great supplement to their evening salad.

INGREDIENTS

  • 100 ML QUINOA
  • 200 G BABY SPINACH LEAVES
  • 100 G CAULIFLOWER
  • 1 RIPE MANGO
  • 1 FRESH POMEGRANATE

METHOD

Boil the quinoa as described on the back of the packet, and leave to cool. Rinse and drain the spinach. Rinse the cauliflower and cut into thin slices. You may want to use a mandolin slicer. Peel the mango and cut into thin strips. Cut the pomegranate in half and hold the cut surface with one hand, while tapping on the shell with a spoon. This is the easiest way of getting the seeds out whole, Clara thinks.

PEANUT DRESSING

  • 2 TBSP PEANUT BUTTER, SALTED
  • 2 TBSP OLIVE OIL
  • 4 TBSP HONEY
  • 2 TBSP WATER
  • 4 TBSP FRESHLY SQUEEZED LEMON JUICE
  • SEA SALT

METHOD

Mix all the ingredients for the dressing. Mix all the ingredients for the salad and serve fresh together with the dressing. Garnish the salad with coarsely chopped peanuts, if desired.

Tip: As an alternative to quinoa, use bulgur wheat, rice or couscous.

A smell to liven up your home

Did you know that spelt is an ancient grain species, dating back to the Bronze Age? Baking with spelt flour ensures a pleasant consistency and more golden bread. Clara even thinks that it adds a wonderful nutty flavour

INGREDIENTS

  • 10 G YEAST
  • 550 ML COLD WATER
  • 2 TSP FINE SEA SALT
  • 200 ML OATS
  • 1 TSP AGAVE SYRUP
  • 2 TBSP OLIVE OIL
  • 600 G SIEVED SPELT FLOUR

 

METHOD

Dissolve the yeast in cold water. Add the salt, oil, syrup, oats, and stir. Add the flour and knead the dough thoroughly, until flexible and smooth. The dough must be quite soft. Cover the bowl and place in the refrigerator overnight.

The next day, set the oven to 210 degrees (fan oven). Make ten rolls, and place them on a baking tray lined with greaseproof paper. For best results, use wet fingers or two tablespoons.

Place the baking tray in the oven and bake for 12-15 minutes until golden. Leave to cool on a rack before serving. Anna and Clara prefer to eat the warm rolls with refreshing jam, which always makes them think of summer.
