Personal and practical rack

With a few beads, leather string and a piece of round timber, you can make a personal hanging rack for your favorite clothes in the bedroom, dishcloths in the kitchen or your collection of scarfs in the hall. The rack can be made in all sizes, but please be aware no to overload it with, for instance, large winter coats or other heavy objects.

Explore and test new techniques when decorating your cakes. For example, you can bake fine muffins with Søstrene Grene’s baking mix, garnish with the sisters’ custard cream and add an extra wow effect with decorations of isomalt.

TIP: Apply a few drops of taste-neutral oil to the spoon before you make the decoration of isomalt, as otherwise it may be difficult to get the decoration off the spoon.

Danish seeded pastry twists recipe (“Frøsnappere”)

Makes: 16

Ingredients
Pastry dough
30 g yeast
2½ dl milk, lukewarm
50 g soft butter
50 g sugar
500 g organic baking mix, bread and baguettes from Søstrene Grene
1 egg, lightly whipped
Pumpkin seeds

Remonce
100 g sugar
150 g soft butter
1 tsp cardamom
1 tsp. ginger, ground

Method – bread
Heat the milk until it is lukewarm, pour into a bowl and dissolve the yeast in the milk. Add the egg and sugar. Pour in the sisters’ baking mix a little at a time and knead the soft butter into the dough. Knead until the dough gets shiny. Let the dough rise in a warm place for approx. 30 min. Now roll out the dough into a rectangle (30×40 cm) and leave it while the remonce is made.

Method – remonce
Pour spices and sugar into the butter and mix until you have an even mixture. Now chop the pumpkin seeds and place them in a little bowl of their own.

Apply a layer of remonce on 2/3 of the dough and fold the dough so you have three layers. Remember to fold the 1/3 of the dough that is not covered with remonce first. Brush the dough with the egg and sprinkle with pumpkin seeds. Cut the dough into 16 pieces of approx. two centimeters each. Carefully pull and twist each of the 16 pieces so they come to look like spirals. Let them prove for another 20 minutes. Bake them at 200°C in a preheated oven for 10-12 minutes.

Danish medal pastry recipe (”Medaljer”)

Ingredients

Shortcrust pastry
500 g wheat flour
350 g butter
150 g icing sugar
1 egg

Fillings
Jam from Søstrene Grene
Custard cream from Søstrene Grene
¼ l cream
Icing sugar to make icing.
You can decorate with sprinkles from Søstrene Grene or lemon zest.

Method
Mix flour and icing sugar. Divide the soft butter into smaller pieces and add the butter a little at a time. Break the egg into a glass, whip and pour into the dough. Gently gather the dough until it is even. Leave the dough in the refrigerator for a few hours.

Roll out the dough with a rolling pin and cut out the dough in the desired shape. Traditional medal pastries are round. Place the dough on a sheet of baking paper and bake in the oven at 200°C until the biscuits get a golden colour. Let them cool on a griddle. Use ¼ l cream to make whipped cream. Dissolve 50 g custard cream powder in 60 ml water (room temperature). When the powder has dissolved, fold in the whipped cream. Place the custard cream somewhere cold for a few hours. Use an icing bag to make a large ring of custard cream on a biscuit. Add jam in the middle. Now add icing made of icing sugar and a bit of boiled water on another biscuit. While the icing is still wet, add cake sprinkles or lemon zest. Finally combine the two biscuits and you have a beautiful, delicious medal pastry.

Tip: The biscuits that you do not immediately use to make medal pastries can be saved in a tin, so you can easily make more medal pastries some other day.

Ingredients
Bread
4 dl water
20 g yeast
3 tbsp olive oil
500 g organic baking mix, bread and baguettes from Søstrene Grene
Salt
Toppings
Rosemary
2-3 tbsp olive oil
Black olives
Small tomatoes
Salt

Method
Dissolve the yeast in the water. Add salt and olive oil. Now add the sisters’ baking mix and thoroughly knead the dough until it is smooth and flexible. It is supposed to be a tender dough. Cover the bowl and let it rise for one hour on the kitchen table.

Grease an ovenproof dish (approx. 25×25 cm), or you can cover little springform pans with baking paper, and then add the dough. Only fill 2/3 of the container, though, so there is enough space for the bread to rise. Leave the dough to prove another 30 minutes on the kitchen table. Make deep holes in the dough with your fingers and place olives and small tomatoes that have been cut in halves in these holes. Sprinkle with oil, rosemary and salt. Bake the bread at 210°C in a preheated oven for approx. 12-15 minutes.

Simple cake decoration with isomalt

“Isomalt is not as difficult to use as most people imagine,” Anna explains. Even as a beginner, you can easily use isomalt to create fine and personal decorations for your cakes.

Tip: Decorate the isomalt flakes with the sisters’ sprinkles while still warm. When the flakes are cold, they can be removed from the baking paper and placed on the cake, which, for example, can be covered in Anna and Clara’s custard cream.

Ingredients

Shortcrust pastry
500 g wheat flour
350 g butter
150 g icing sugar
1 egg

You can decorate with sprinkles from Søstrene Grene or freeze-dried raspberries

Method
Mix flour and icing sugar. Divide the soft butter into smaller pieces and add the butter a little at a time. Break the egg into a glass, whip and pour into the dough. Gently gather the dough until it is even. Leave the dough in the refrigerator for a few hours.

Divide the dough into two equally large pieces. Roll out both pieces into rectangle shape. The width of the rectangles will decide the width of the pastries. Bake both pieces in a preheated oven at 200°C until they get a golden colour. Place the newly baked pieces on a griddle to cool down. Make the icing by mixing icing sugar and a bit of boiled water. Cover one piece with Søstrene Grene’s organic raspberry jam and add a layer of icing and sprinkles on the other piece. The piece covered with icing is then placed face up on top of the piece with jam. Now slice the pastry into the wanted sizes.

Tip: You can experiment with the flavours. Clara is particularly fond of strawberry jam, but Anna wants to try out apricot jam next time.

Makes: 12

Ingredients
100 g sugar
150 g brown sugar
140 g butter, at room temperature
1 large egg
175 g plain flour
100 g Søstrene Grene’s organic muesli
1 tsp baking powder
½ tsp baking soda
1 tsp salt
1 tsp vanilla sugar
100 g dark chocolate

Method
Beat the sugar, brown sugar, vanilla sugar and butter together until smooth. Add the egg and beat again.
Mix the flour, muesli, baking powder, baking soda and salt together in another bowl.
Carefully fold the flour mixture into the butter mixture. Do not overwork.
Coarsely chop the chocolate, fold the chocolate into the dough and mix well.
Refrigerate the dough for at least one hour, preferably until the next day.
Cut the dough into 60 g pieces, and place them on a lined baking tray. Leave plenty of space between the cookies as they will spread and expand in the oven.
Bake your cookies with muesli in the middle of the oven at 175°C for about 15 minutes.

Tip
The dough will keep for up to three days in the refrigerator, or it can be placed in the freezer and be defrosted once you next feel a desire for homemade cookies.
